Fried soft shell crabs w/peanut cream pesto
I just saw the most amazing recipe on TV and had to share it after devouring 3 crabs as a snack (unintentional of course, just tasting it heehee).
Wash and completely dry fresh softshell crabs.
Dress with salt and pepper and paprika to taste.
Saute or fry in olive oil or butter fresh softshell crabs until outside is crispy.
Drizzle with sauce made of :
handful of basil
handful of peanuts
1/4 C water
1/4 C heavy cream
4 TBS good olive oil
salt and pepper to taste
Holy cow this is good. It's even better if you have a real deep fryer.
Carb count per serving can't be more than 2-3 based on how much sauce you drizzle on.
