Default My new favourite breakfast

Kinda' stumbled across this (the beauty of experimentation that comes with several weeks on Atkins and fine-tuning your diet).

I heat about two tablespoons of olive oil on a saute pan and add 7-8 slices of thinly-shaved deli ham. When it's heated through, I remove it from the pan, transfer it to a cookie sheet and throw about .75 cup of shredded cheddar cheese. I then heat it in the oven until the cheese is melted and I eat it with 2 tbps of salsa (2 tbsp of this kind being 2.8g of carbs).

Oh my GAWD it's good!!!

Does it sound sensible? Atkins-friendly? Unless there is evil lurking in the ham, I put the breakfast under 5g of carbs.

My only concern is with the DELI ham. Can you read the label? Does it have sugar in it? Alot of ham does. Secondly, why do you transfer it from the pan to the oven? Why not just put the cheese on top of the ham in the skillet and let melt? Or better yet, just do the whole thing in the microwave. Just asking

I would try using pre-packaged ham, or better yet, see if you can find one that isn't processed with nitrates. The salsa ingredients should be checked too. Making fresh would be better. Otherwise, sounds great! Not something I think *I* personally would like, but I'm kinda picky

blueflyer - yup, I can read the label (it comes in a plastic package). Per 60 g it has 0.7g of carbs and 60 calories. Sugar is not listed in the ingredients, but caramel is listed among the things it is glazed with (I was really surprised to see that it was glazed, as you can neither see or taste any kind of glaze....there's just an extremely thin strip around the edges where it's brown in colour)

emeraulde - this is prepackaged - maybe I threw you off by saying it was deli.....I meant the thinly-sliced ham, as opposed to ham steaks. "Sodium nitrate" is listed among the ingredients, though......nitrates are bad? And I checked the salsa ingredients: no sugar or sweeteners of any kind.

Thanks for the feedback, ladies. It did make me check the labels again extra carefully!
