broccoli, daikon, cauli, and sunflower seed "salad"
Hi, All!
The subject line says it all--almost!
I made a yummy, savory cold "salad" tonight with raw daikon, broccoli, and cauliflower cut up like matchsticks (about 1 cup broccoli/cauliflower mixed and .5 cup daikon total). To the crunchy veggies, I added about 2-3 TBL of mayo and 2 TBL sunflower seeds. I sprinkled the whole thing with black pepper, tossed it well, and let it "sit" for 15 minutes while I made some turkey burgers.
Two of us ate 1/4 cup each, and there are leftovers.
According to fitday, the "total" batch had 14 carb and 6 fiber, so that's not so bad! Hey, we could've eated the whole batch!
