If you look on any nutritional facts thing on the side of a box of food or whatever the recommended amount of calories is 2000, and then theres the 2500 next to it..Im guessing for men? Just curious what everyones take on that is?

I personally think, in addition to percentages of types of food we should be eating, the daily calorie recommendations also need to be revised. Most women require less than 2000 calories, and most men require less than 2500 calories. I think a more realistic number in todays age of no exercise and convenienece is 1700 and 2100ish respectively, to maintain your weight (assuming you are not overweight or signifigantly above average in muscle or height).
