tweaked muffin recipe
I have played around with a recipe by Rob found on another thread and have come up with a pretty good breakfast muffin.
1/4 cup of butter melted
4 eggs
1 tsp of vanilla
1tbs of splenda
1tbs of brown sugar twin
2 cups of ground almonds or pecans or mixed
3 tbs of Flax seed meal (optional just started adding this for OMEGA 3 works the same with out it)
2 tsp of baking powder
I beat the eggs add the butter, sugar sub and vanilla and beat a bit more and then add the dry ingredients just with a spoon. Spray a muffin tin and you should end up with 12 muffins. Bake at 400 for 10-12 minutes
Net carb these are about 2 carbs each, they freeze well and I just pop them in the microwave add a bit of low carb spread and 2 will keep me full until lunch no problem.
