Default Do you eat Green Beans?

I am just wondering do you eat green beans? I love them I eat maybe a cup a day and they are low in carb :P

I sure do! I usually saute them in butter. They are served often at my house. Induction legal too.

I don't have them daily but several times a week. I eat one cup also as I am still trying, for the most part, to stay at induction level carbs.

Nothing beats fresh beans when they are in season, like right now.

As an interesting side note, those folks who follow paleo eating plans do not eat green or wax beans. When left to mature, the seeds turn into a starchy legume.

After eating them so much at visits to my mother in law's house I HATED green beans for years.

Then, after being on this diet I started having cravings for them! I never had cravings for green beans in my entire life!

We eat fresh ones (10 fresh green beans = 2 carbs) at least once a week here, this week we had them twice with my two favorite recipes:

green beans boiled lightly (4 min) then flushed with cold water then sauteed with olive oil and garlic and topped with parmeasn. YUM!

This low carbing has made me passionate about green beans!

thanks to everyone for the ideas. I used many of them today, and made the BEST green beans I've EVER had!

I basically took this recipe, and while the green beans were boiling (in salt water- thanks for that idea) I toasted in a frypan, a handful of chopped pecans in butter. when they were done, I removed them and added garlic. By then the green beans were ready so I added them (after a cold water rinse) to the frypan. Added saltnpeppa to taste, a couple splashes of white wine vinegar. Let that cook for a couple of minutes and topped it off with parmesan and the pecans. Bet crumbled bacon woulda been wonderful!

Thanks to everyone in this thread who inspired me to give it a shot!

I grow dwarf stringless green beans in my veg patch and couldn't do without them. As a paleo living in Australia I have pointed out elsewhere that our local paleo people (aborigines) ate quite a few varieties of legumes.
Still do.

The paleo diet "plan" states that early humans wouldn't have eaten legumes because many varieties were poisonous and they wouldn't have had the expertise to detoxify them.

Aussie aborigines, in only 60 thousand years, have managed to find ways of detoxifying lots of native foods, so I think that our ancestors of a million years would have done similarly.

However, in agreement with the previous post, I draw the line at cans and cans of baked beans in tomato sauce!!

For something a little different .... try steaming your green beans, fresh, of course, with a couple of slices of bacon on top. Disguard the bacon after steaming. Really Yummy!!!

I love Green Beans Almondine, and it's really simple to make. Steam 1 lb fresh or frozen beans until tender. While the beans are cooking, saute' 1/2 c sliced almonds in 4 tbsp butter until golden. Drain the beans, toss with the almonds and butter, season to taste (I usually add a big pinch of tarragon), and serve.

question here, how long does it take for green beens to mature and "turn into starchy legumes" according to Karen?
