Default turkey mean = nc & turkey broth = many carbs

why does turkey meat contain virtually no carbs but home made turkey broth contain many?

Usually broth or stock contains carrots, onions and celery, all of which contain carbs. A few will leach out into the liquid, but you don't have to use them in your own broth.

Thanks for your quick reply. When I made the turkey broth (from our Christmas turkey) I did not have anything else but water simmering all day. I added s small amount of onion, carrot and green beans and larger amount of celery about 20 minutes before I served it. Does this mean the carbs would be less that if I had simmered vegetables with the turkey bones etc.? I am hoping yes as our family loves soup and especially homemade.

Hi Canada F35,

Don't worry. The broth you described can't have very many carbs in it any way you cook it. The vegetables you list are good healthy ones and really are just the type of ones I have used for over 2 years on LC with no probs.

I am no expert on these things but why do you think your broth has loads of carbs? A tinned broth soup always has lots of carbs because they always use flour and maize extracts to bulk out the stock. Homemade soups don't, so sit back and enjoy such healthy and tasty soups.

Yours aye, Scotsman.

Yep!! The sugars (ie carbs) cook out of the veggies most people put in their stocks just to season the broth a bit and cook to mush. (things like carrots, onions, turnips, celery, etc) If you add the veggies at the very end, the sugars don't have time to leach out and therefore, the carbs in the stock would be less.

Nothing better than homemade stock! yummmmmmm!
