Default Can you freeze cheese or cream or half and half?

I have a lot of it and don't want it to ruin!
How long can it stay in the frig without going bad?

I know cheese freezes well not so sure about the cream or half and half? Hope someone else can help ya.

Question To Freeze or not to Freeze

Hello,.
I freeze cheese all the time! When you go to thaw just throw it in the fridge for a few days and wa-la good as new.

I have tried to freeze heavy cream because I have frozen milk before. It was a mess. I froze it in the carton (not a great idea) When it thawed the carton fell apart. This was before I started this WOL and I just figure now if I find it on sale I still only buy what I can use!

the cream seems to stay good in the fridge for quite a while if you make sure its staying good and cold...I just smell it and check for lumps before using

If you do freeze cheese, it doesn't change the taste, but it can change the texture a bit. I often buy cheese on sale and pop it in the freezer to keep space open in the refrigerator. The only small problem that I've run into is that when I try to grate previously frozen cheese, it's often more crumbly and difficult to grate. OTOH...maybe if I grated it first I wouldn't have such a problem.
Something you can do with cream is freeze it in ice cube trays (this works great for broths too) and then put it in a zip-top freezer bag. That way, you don't have to thaw out the whole thing when you need some...just the amount that you want.

I freeze grated cheese all the time, I use small ziplock bags and put 2 cups in. Many recipes call for 2 cups of cheese, so it makes it easy and defrosts fast. And if you shop at Costco they sell grated cheese in large bags that you can divide out in smaller quantities and freeze.
