Since non-flesh protein sources have carbs in them .. cheese, eggs, soy, veggie protein ... it's very very difficult for vegetarians to maintain adequate protein and calorie intake within the strict carb limits of Induction, unless you're not eating any other vegetables?? It's often better to start at a higher carb level to accomodate the different protein needs. Perhaps a sample day's menu might be helpful for us to spot some problem areas for you.
Hypoglycemia can cause the symptoms you describe, as well as potassium. You need to have more frequent meals and snacks, which should always contain some protein. This will keep your blood sugar stable. Try not to let more than 3 waking hours go without eating.
