Loosely based on
this recipe. Changes I made: used ultra-filtered milk, and reduced the quantity because it wouldn't have fit in my Magic Bullet. I subbed xanthan gum for cornstarch and omitted salt because I find parm cheese very salty.
3/4 c ultra-filtered skim milk (I used Fairlife)

1/2 c 1% cottage cheese
1/4 tsp
ea pepper, garlic powder
1/8 tsp
ea dried basil, oregano
1/2 c dry grated parmesan cheese
pinch xanthan gum or other thickener

salt to taste
Combine ingredients in blender, blend until smooth. Pour into saucepan, simmer until desired consistency. Adjust for thickness. Makes 4 servings.
I went overboard on the xanthan gum, using 1/4 tsp. It came out pasty, but the flavour was spot-on.
It really reminds me of how I remember Classico jarred alfredo.

*Revised: I omitted the xanthan gum, and cut the Fairlife to 1/2 cup. It was a good consistency, maybe a tad too thick. I could have added another splash. It'll depend on your brands of parmesan and cottage cheese.
