Default Makeover for Salmon Patties

Remember the Salmon Croquettes/Patties that we made with cracker crumbs, flour and eggs?
Does anyone have an idea for making these with no crackers or flour?

When I make them, I use one can of salmon, one egg, a tablespoon of chopped onion, a tablespoon or two of parmesan cheese, and some salt and pepper. I fry them in a pan and they turn out pretty nicely.

I usually use the dry grated stuff, since it absorbs moisture a bit like breadcrumbs do.

OOoooo...this sounds so good. I had forgotten about these. When I was a little girl my mother used to make these, however we never ate salmon...it was too expensive for our family of 8 children, so she used mackeral. That was really good too. Another thing to add to this that would add a little zing is a dash of spicey mustard...if you like that. Mmmmmm, I think I will try this. I have enjoyed making salmon salad, much like tuna salad.

Throw in some chopped celery too.

And if you don't like parmesan cheese, put in some ground porkrinds. They act just like breadcrumbs and you can't tell they are porkrinds.

I was just thinking about making salmon patties. And thakfully it's something my other half will eat as well. Gottal love those recipes that appeal to all!

I'm trying the pork rind addition and some parm cheese too. I'm sure they'll be great. Oh, the celery addition sounds A+ too.

I agree with you, Donald. Throw it all in. Sounds good to me. Have never tried them with parm...but I will the next time I make them. I have put Ricotta in, but never thought of parm.

I made these the other night. Had a salmon filet instead if the canned so I used it. Also used a mixture of the pork rinds and parmesean cheese, some dried grated lemon peel, dill, green onion and egg.
They were fantastic!
DH says they are better than his Mom's....even LC!!!!

I am going to turn him into a LCer yet!!!

Made some broiled fresh fillets yesterday and needed something good to do with the leftovers......the patties sound delicious!
Was the salmon salad good made like tuna?? It was the first time I made fresh salmon and I love it!!

Ah I am so glad to be back posting on this forum, I had forgotten how inspiring it could be in sooo many ways... I got half way through reading this thread andI got overwhelmed by the urge to go and make my own tuna patties( tuna, two eggs, curry powder a bit of onion, almond meal) and have just put them in the oven!

Default Salmon patties

When I make salmon patties I use an Atkins product called KetoTatoes (or something like it). I just add a little of this to bind the salmon. I used to use instant mashed potatoe flakes and it made the best patties. Then add whatever else you like, eggs, celery, onion, etc. I think I'm going to break down and try the pork rind filling today.
