Default Love the cauliflower hashbrowns

I just can't tell you how much I love cauliflower hashbrowns. Had them last night and they were soo good I made them again this morning with my steak and eggs. Hashbrowns and pizza are two things that I have missed the most. But now I don't have to, as these hashbrowns are just as good, if not better, than the old starchy ones. And as I move up the rung on OWL I know there are several very good recipes for pizza in my future.

This sounds like a great recipe (as does the mock mac & cheese)!

I like to cut radishes into quarters and saute in butter w/onion for a nice ungrated hashbrown. They are yummy!!!

It continually amazes me how fabulously delicious lc eating is!!!

I'm sorry I thought this was common knowledge on ALL forums. Wow, a Newbie like me gets to share something new. I got this off another forum that I had to walk away from because I wasn't following DANDR. I just got tired of all the s&#t they were giving me.

What makes these so great is that crunchy, crisp taste that I missed at breakfast.

CAULIFLOWER HASH BROWNS
12 ounces fresh cauliflower, grated, about 1/2 medium head
4 slices bacon, chopped
3 ounces onion, chopped, about 1/2 cup
1-2 tablespoons butter, optional
Salt and pepper, to taste

In a medium-large nonstick skillet, cook the bacon and onion until they just start to brown. Add the cauliflower; cook and stir until the cauliflower is tender and nicely browned all over. You can add a couple tablespoons of butter during cooking. This will speed up the browning and add nice flavor. Season to taste with salt and pepper.

Makes 4 servings
Do not freeze

Per Serving: 116 Calories; 9g Fat; 4g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

I'm a long time lowcarber and I've never made those (usually I tell myself I'm going to try something new with cauliflower..but, inevitably I use it to make the fauxtato salad). But I JUST bought a head...and I WILL make these tomorrow morning.

Thank you so much for sharing the recipe. Are they ok reheated?

I don't know. I always cut down the recipe for a single serving. I would think they would be fine if you reheated them in a frying pan with butter.

Huh. How do you grate a cauliflower? Very carefully?

I tried the turnip thing, dont like the flavor. DANG I guess Im picky. Im making polisn and sauerkraut this week, maybe Ill try some fried "fauxtatoes" with dinner.

If you haven't tried the radish hashbrowns, I highly recommend them. Parboil the radishes first for 5 minutes, then drain. Blot out excess moisture on a paper towel. Fry in bacon grease with onions. Add peppers if you like. Really good stuff, IMO.

I started out using diced red radishes, but now I've switched to using daikon radish, because it's easy to grate ... just like a potato. I prefer grated hashbrowns.
