I've been reading a bunch of cookbooks lately, and almost all of them have a recipe for "Joe" - a gound beef, egg, and spinach concoction that was created in San Fran back in the '30s. I came up with my own version this morning that I am *in love* with! You may like it too:
Cheesy Joe Breakfast Skillet
1 lb lean ground beef
1 tablespoon minced garlic
Salt and pepper to taste
1 (6-oz) bag fresh baby spinach
5 large eggs
4 oz shredded cheddar or Colby
Mist a large skillet with oil of choice and begin to brown the ground beef. Add in the garlic. Continue to brown meat, stir often. Add in the salt and pepper. Layer the baby spinach on top of the meat and cover; allow to cook about 5 minutes or until the spinach has wilted. Carefully combine the spinach with the beef.
In a small bowl, whisk together the eggs. Pour the eggs into the skillet and stir into the beef and spinach. Allow to cook for a few minutes while stirring often. When the eggs are about set, stir in the cheese. Combine all ingredients and cook until you get a casserole-type consistency.
