Post Cheese Cracker Chicken

This is an "Oven Fry" substitue.

My husband can't stand the thought of using crushed pork rinds for anything (he can't stand the tought of pork rinds, period)
So, I tried crushing up the "cheese crackers" - (the ones you can make out of american cheese in the microwave) to coat chicken.

I used boneless breasts, coated them with mayonaise, then rolled them in the crushed "cracker" crumbs. Placed the on a cookie sheet sprayed with Pam, and baked them about 25 minutes at 400 degrees. It is quite tasty. You can season the mayo with Tabasco, mustard, or your favorite seasonings if you want. It is not quite as crispy like store bought "Oven Fry", but pretty close.

It takes about 1 slice of cheese per chicken breast. The leftovers are good too!
