Default Veg has me confused ! !

I went into my bookstore the other day and bought The Fat Fibre and Carbohydrate Counter by Dell Stanford. I have been using this as a carb guide choosing vegetables like courgette(Zucchini) Mushrooms etc.I have been calculating the carb values from this book. I went and checked the carb gram counter from Dr Atkins book and there are big,big differences in the carb content for identical veggies. Here are some examples:


My Book Dr Atkins

Mushrooms 100g 1.5g carbs 10 small 4g carbs
Turnip 2oz 1g carbs 2oz 4g carbs
Cauliflower 100g 2g carbs 60g 2g carbs

The list of differences goes on and on. I am so confused. I guess if I am on the Atkins diet I should be following that carb guide right ?

I would say thet the Atkins counter has already pre-subtracted the fiber. In the Dell Stanford book if you subtract the fiber from the carb count, do you get a similar number to the one in Atkins?

The #1 source I use for carb counting is the USDA Database which is in Low-Carb Tools at the top of the page.

There are many reasons for such differences.

Some measure food cooked, some measure it raw. Some subtract fiber from carbs, and some don't.

You can compare values with the USDA values to see in depth details of nutritional information.
