Hi there jedswife, welcome aboard. Is there any way you can find out the ingredients in the curing/ brining mixture? Very often sugar or dextrose is used to flavour and tenderize. It may not be very much, but it would be good to know -- 0.5g or 1.0g per piece can add up way too fast if you think it's a "free" food.
I make my own home-made jerky in a dehydrator .. but it still has carbs from the marinade ingredients, even without added sugar.
