How about meat on a stick?
Really, it depends on what foods you are excluding on your KISS plan.
But you could make shishkabobs maybe.
How about hamburger salad. Take one salad, top with a cooked hamburger and whatever dressing you use.
Tuna fish with pickles.
Taco salad--no taco, just salad with seasoned beef or chicken, salsa or sour cream if you do that.
One concoction I have made is with broccoli, leftover chicken or tuna, cheese and salsa. (Though if you're doing no dairy it may not work as well, the melted cheese kindof holds it together.)
You might be able to make homemade soup with allowed vegetables, beef stock and beef cubes.
Just off the top of my head, but there is a recipe section here that should provide you with endless possiblities.
