Default Food for hiking

Sunday I'm going on a long (8 miles) hike. I will be having lunch on the trial.

Do you have any ideas on what I can pack in that will be tasty and satisfying for lunch? I have a bunch of beef jerky and almonds to take with me, but I want something special for lunch.

All ideas will be appreciated.

sounds like fun! you already have two of my favorites planned. Other good snacks are sunflower and pumpkin seeds.

I have no great suggestions for lunch, but a fact to add...mayo from a jar is often mistakenly thought to go bad if not refrigerated; what I heard on Food TV is that this is not true--instead, because of the acidity, it actually preserves the other foods it is in contact with! (what you learn from food tv, eh?)

ham mayo roll-ups with celery and raw turnip slices? hmmm. I hope someone else is more creative than I today!

since you're on SP, you could have a tortilla or something like that...and since you're hiking 8 miles, a bit more than your 15 carbs, right? (I'm only partway through the book, so I'm sorry if I'm wrong about that)

Smile Chicken Salad!!

You can take one of those freezer ice things (?) that you can buy to keep baby bottles cold - they do come very small and are flexiable. Take that and a small container of chicken salad wrap it in foil and a zip lock bag. That will easily fit into a daypack or large butt pack!! It will stay cold for hours!! I am planning to do just that on my Girl Scout Troop hike!!!

I hope this idea helps.

Have Fun!!

Hi Deb Penny,
Sounds like fun for you my dear! The ice container sounds good to keep your goodies nice and cool. I would bring cut up cucumber, some almond butter or nuts and 1/2 an apple or so. The beef jerky sounds good, your own recipe I presume! You'll probably be able to up your carbs to account for your activity so you might have a little more leeway.
Have a great time and please write up a report of your day and how you did.
Maureen
