hi everybody,
We all know that egg whites beat up fluffier when they're room temperature than when cold-from-the-fridge. But what to do if we want to bake RIGHT NOW, and we forgot to set the eggs out??
Separate the cold eggs, placing the whites in a small bowl. Place this into a larger bowl of hot water (or the sink). The whites will warm up quickly! Warning - do not try to heat up in the microwave. Stupid me, I did that once; had poached egg whites in 10 seconds flat ...
For the record, cold egg whites will whip up okay, it's just that the protein (albumin) can hold more air when it's warm, thus will be higher and fluffier.
