Smile Tapenade-Mozzarella Chicken Rolls

I made this tonight and it was easy and delicious! If you love olives, you'll enjoy the way the tapenade flavors the chicken.

4 boneless chicken cutlets - or - 4 breasts butterflied and pounded
Cantare brand Olive Tapenade
Shredded Mozzarella
Salt and Pepper
Olive Oil Spray
Toothpicks

Preheat toaster oven to 450.

Season chicken with salt and pepper to taste. Stuff each chicken breast with tapenade and mozzarella -- simply make sure each breast is not overstuffed.

Roll each breast in half and fasten with a toothpick.

Spray some olive oil spray in a non-stick pan and set heat to medium high. Brown each chicken roll on each side and then finish in the oven, for about twenty minutes.

Let sit a few minutes before serving. Serve on a bed of greens with your favorite vinagrette (I like olive brine and olive oil). Sprinkle a little more cheese on top of each chicken roll and garnish the dish with a few Campari tomatoes for color.

Serves 2-4

Look online for recipies and you can make your own tapenade. I've never seen it in the stores here, but I did make my own when I made mouffalattas one time.

Tapenade is a paste, originally from Southern France but pretty much a Mediterranean concotion, made from primarily from olives (green, black, and so forth). It can include capers, anchovies, roasted bell peppers, garlic, mustard, olive oil, salt, pepper and spices of your choice. I found a 7 oz. container at Publix (Miami Beach area). The brand was "Cantare" ... I liked it because it was not completely processed into a paste. All the ingredients were minced.

It's not difficult to make ... toss together the above ingredients in your processor or blender and process to desired texture.

(I liked this one store brought to save time and because you have to buy A LOT of olives to make it!)
