Talking Soooo yummy

OK. So yesterday afternoon I had this HUGE craving for something sweet. I haven't had many cravings, but this one was a whopper! I was especially craving cheesecake. So I decided to look in my fridge to see what I had....hmmm...I have cream cheese and heavy whipping cream. Then to my cupboard...vanilla extract and Splenda. I just experimented and combined a little of all of the above and...VOILA!! Cheescake!! Honest to goodness it tasted just like regular cheesecake, without the crust. I used approx. 2 tbsp. of cream cheese and I'm not sure how much of the rest (very little though), I just kinda guesstimated. I figured no more than 3.5 g of carbs, and I'll have to say it was quite satisfying and veeeeeery yummy.

I do the same thing. It's even better with just a drop of lemon extract. You can add a tablespoon of unsweetened cocoa for a chocolate variety, too. I like this kind of dessert 'cause you can just make a tiny amount at a time.
