Default Charred Garlic Rubbed Rib Steak

This recipe is courtesy of markjcooking.com and can be found in it's original form here: http://www.markjcooking.com/recipex.php/11643 The recipe below is slightly modified by omitting 1 TBSP of pepper.

4 Rib steaks on the bone (10-12 oz each)
2 TBPS olive oil
3 TBPS coarse ground black pepper
4 TBSP Dry thyme
4 TBSP finely chopped garlic
Course salt to taste

In a small bowl mix Olive oil, pepper, salt, thyme and garlic. Rub marinade mixture on to meat and let marinate at room temperature at least 20 minutes. Cook on hot grill or under pre-heated broiler (pre heat broiler at least 20 minutes) until done to your liking, turning once during cooking. I prefer my meat well done, and cooked each side 6 minutes. It turned out very well. The site suggests 4 minutes per side for medium rare.

This was AWESOME!!! A little hot, so I might cut down the pepper even more next time. I made this under the broiler, but will definitely try it on the grill when the weather is better. I served it with a bag of Schwans pre-mixed meditteranean veggies for me, and garlic and olive oil pasta for the rest of the family. It was a hit with everyone!
