I believe it's ok. Dr. Atkins raves about it in his books. Plus:

I believe Soy Cheese is basically Cheese Flavored Tofu [though I may be mistaken]...so, I don't see why Regular Tofu wouldn't be allowed under the same conditions.

Just amke sure to watch carb counts. Some brands of tofu are higher in carbs then others. The firm "lite" kind is actually the lowst.

Tofu is a wonderful protien source for many vegatarians who do LC. It can be mixed with eggs to help add volume, and used in dairy free quiches. You can also make a tofu whipped cream if you are trying to avoid dairy.

I also enjoy it cubed into asian soups such as egg drop. I havn't had much succsess with stirfries though as the tofu wants to crumble on me. I found it works great in quiches though. I did have a problem with the quiche being soggy after freezing and thawing, but not sure if that is the fault of the tofu or not.

According to my Tofu pkg, there are approximatley 10 carbs per lb. Its a protein, I use it to make soups and dips... I live on this stuff.. and I am on 20-25 carbs per day.
