Default breakfast waffles. franken food?

I just made Sherries LC waffles. It is made with pork rinds, heavy cream, and eggs. It called for malitol but I used splenda. They were as, promised, just like whole wheat. People who didn't smell the prep did not guess they were pork skins. Would this be considered franken food?

I think any food can be franken food if you eat too much of it. By the ingredients it does not sound like it would be a problem unless you ate too many. Curious...what's the carb count estimate for one? Secondly, how does it taste (I don't care for pork rinds)

The recipe was supposed to make 10 with 1 carb each. But I made thicker waffles (5) so that would be 2 carbs. I put 2 pkgs splenda in and I ate 2 of them.

For me franken food is one that contains all kinds of chemicals in order to mimic natural foods. All the ingredients in there (except maybe the splenda) look all natural to me, so I wouldn't call it a franken food. With the high sodium though I would call it a food to be had in moderation

Well, when you really think about it, Frankenstein made a monster out of body parts and pork rinds are body parts.

"Frankenfood" is one of those labels people slap on a variety of foods... everything from shake mixes to diet bars to lc specialty foods like breads, etc.. Even artificial sweeteners.. so by that standard...yes.

Personally, I use some of the lc products to help me NOT give in to the real thing. I guess I'm not a purist, but I'm happy!

Bette-- there are different definitions and different "groups"... Some are "Real Whole Foodies" some are "Find a low-carb Sub for the Food I Miss"...then there's the "If I don't suffer, I'm not doing it right".

Find a niche, and settle on in!
