Beef Stroganoff
Makes 4-6 servings
2 pounds beef sirloin, cut into thin strips
5 Tbsp. unsalted butter
1/2 cup diced onion
8 oz mushrooms, sliced
salt and pepper
1 Tbsp. tomato paste
3/4 cup beef or chicken stock or water
2 Tbsp. dry sherry
1 1/2 cups water
2/3 cup sour cream
Heat 3 Tbsp. butter in a frying pan over high heat and brown the beef. Remove meat and juice. Add 1 Tbsp. butter to the pan, add the onion and cook over medium heat until tender, about 5 minutes. Add the meat and juices and season with salt and pepper. Add tomato paste, stock, sherry, and water. Bring mixture to a boil then cover and simmer for 1 1/2 to 2 hours, until beef is tender and the liquid has reduced by half. Heat the remaining butter in a frying pan over high heat. Add the mushrooms and fry until lightly browned. Add to the meat along with the sour cream and heat through. Taste and adjust the seasoning.
You can thicken this using xanthan gum if you like. To do this, sprinkle a small amount evenly over the surface before you add the sour cream and mushrooms and whisk like crazy. Continue adding the xanthan gum until you have a nice sauce consistency, then add the mushrooms and sour cream.
