Default Chicken Spinach Bake

This is a HC recipe I converted from BHG which is really good!


1/2 cup grated Parmesan cheese
4 skinless, boneless chicken breast halves
1/2 cup sliced green onions
2 tablespoons butter
1 cup heavy cream
1/2 10-ounce package frozen chopped spinach, thawed and well drained
4-ounce ham slices, chopped

1. In a shallow dish lightly coat chicken pieces with the Parmesan cheese. Arrange in a rectangular baking dish. Reserve the remaining cheese.

2. In a large saucepan cook green onions in butter until tender. Add cream and cook and stir until bubbly. Cook and stir for 1 minute more. Stir in spinach and ham.

3. Spoon spinach mixture over chicken; sprinkle with the remaining cheese. Bake in a 350 degree F oven for 40 to 45 minutes or until chicken is no longer pink (170 degree F). Makes 4 servings.

I do not thaw the spinach, and I made it tonight with Canadian Bacon instead of ham... tasted greast!

Approximate Net Carb Counts:
Whole recipe : Cheese 2, Chicken 0, Green Onions 1.2, Butter .02, Cream 6.6, Spinach 6, ham 2, for a total of 17.82 but a quarter of the serving is only 4.5 net carbs.
