After being twice disappointed with baking results using Atkins Baking Mix (I made chocolate peanut butter cookies that tasted like used sponges and brownies that tasted like chocolate omelette), I decided to try Ketogenics brand Chocolate Chip Muffin Mix, which I found at a local health food store for $11CA/box. Pricey, yes, but if I think about it, had there been pre-baked low-carb muffins for sale at the shop for $1 each, I would have snatched them up.

The muffins turned out pretty good! Warm out of the oven with a good pat of butter, they're a real treat. And at 1 net carb per muffin (12 to a box), you can even have 2 if you want.

Some might find them a bit dry, but that's nothing that butter or natural peanut butter can't help.

There are also 2 other flavours available, Apple Cinnamon and Blueberry.

Now, if we can only get that price down!
