Oat/Almond Flour Muffins

1/2 cup oat flour
1/2 cup almond flour
1 tsp. baking powder
1/2 tsp. salt
sweetener equivalent to 1/4 cup sugar
1/3 cup cream
1 T oil or melted butter
1 egg

Stir the dry ingredients together. Mix wet ingredients, add to dry, and mix.

Bake 15 minutes at 425 degrees

Makes 6 muffins or 6-10 drop biscuits

Carb count: total recipe 31.8 grams, for muffins 5.3 grams each, for drop biscuits, depends on how many you make

You can add bacon or cheese or chopped black olives or chopped scallions or nuts and cinnamon or whatever you want to these. You might want to leave out the sweetener if you use the savory ingredients.

We (DH and I) like these, but usually I make them if we are having company for breakfast, because we don't really miss bread. We've been known to eat one each and ignore the other four so long they have to be tossed.
