Smile chicken tenders

4 large boneless chicken breasts cut in 1/2 (or 1/3 if you like)
1/4 C heavy cream
1/4 C water
2 cups plain pork rinds
1/4 C grated pepperjack cheese
1 tsp chicken seasoning
1/8 c olive oil

heat olive oil in a large skillet.

mix the cream and the water in a small bowl... in a blender, grind pork rinds.. then add your cheese and seasoning and pulse a few times... pour into a dish (or baggie) dip each piece of chicken in the wet mix and then roll (shake) in the dry mix.

add each piece slowly to the hot oil.. i cooked 1/2 the recipe at a time.. turn each piece every once in a while to get a good color on both sides.. you can continue to cook all the way through or, like i did, finish cooking them in the microwave (when my tenders got brown enough i put them in the microwave for 5 minutes.. still stayed crispy)

these were so delicious and juicy!! And the carbs are minimal (especially since you dont use even half of the cream.. it comes to approx 4 carbs for the entire recipe depending on what spices/cheese you use) I adapted this recipe from the recipe on fried chicken found here in the main recipes section (thank you chikadee)

a nice addition would be the mock mashed potatoes..

hubby LOVED them!! he ate them cold, too (middle of the night munchies.. which is actually what i made them for) They taste like the 'real thing'!! im amazed simply because im a terrible cook LOL

i had 2 this morning for breakfast (heated up in the micro for 45 seconds) dipped in sour cream.. yum!

I hope you enjoy these as much as we do!! (hubby isnt even LC..)
