Default Rice?

Don't laugh, I am trying to somehow make Persian food low carb. The boyfriend says that in Iran people say if you wash rice before cooking it it removes some of the starch and it has a lower carb count. Karen, do you know if there is any truth in this?

Washing does remove some of the surface starch, but not enough to significantly lower the carb count.

Cauliflower is problematic because it doesn't absorb but throws off water instead. If it's fried in oil with the spices, it makes a pretty good alternative. Another thing to consider is using soy grits or TVP instead.
