Hey otmer, I'm also a non-egg eater. What I generally have at breakfast is an Atkins Vanilla shake (mostly for the fat and protein). I've also ate italian sausages and guacamole. Mostly it's non-traditional breakfast items and it works out really well. I would say just about anything that you would normally eat for lunch or dinner would be perfect at breakfast time. You could also do BLT wraps (tomato, bacon, and cheese wrapped around a piece of lettuce), dip those into a ranch dressing.
Plenty of things, just don't get caught up in the mindset of "breakfast must be traditional". For those of us who don't eat eggs, that's a rough spot unfortunately!
Best of luck!
