Default Pan-Fried Cod & Zucchini Straws

Just made this tonight and it was wonderful. I got the batter recipe from lowcarbluxury.com

Ingrediants
2 cod fillets
1 zucchini cut into thin "staws"

Batter:
2 eggs
2 tbs soy flour
1/8 tsp baking powder
salt, pepper, onion powder
2 tbs parmesean cheese

Directions:
Beat the egg whites until peak form. Gently fold beaten yolks into the whites. In another bowl, mix the soy flour, baking powder, parmesean chseese and add a dash of salt, pepper and onion powder. Fold into egg mixture.

Meanwhile, pour about 5 tbs of oil into a frying pan and set on the highest heat.

Completely saturate the cod and zucchini in the batter. I just kindve dumped everything in an mixed with my hands.

Put everything into the pan. Since I battered everything together, the zucchini stuck to the cod which I kinda liked, but you could also fry separatly.

Fry until golden brown, then flip and repeat on the other side. It took me about 10 minutes.

I served this warm marinara sauce (the kind in a jar) for the zucchini, and fresh squeezed lemon and a bit of mayo for the fish.

I haven't had anything fried in 4 months so this tasted amazing and had absolutly no soy taste whatsoever. The batter fried really crispy and tasted great. Let me know if anything tries and likes this!

I was planning on some fresh blueberries for dessert but stomach is telling me capacity has been reached.....now its time to enter a "food coma".......ahhhh
