The bread for this recipe is an adaptation of the almond bread Plum posted in Atrsy's journal on April 23rd. You can find the original recipe here:

The ham and cheese sandwich uses half the almond bread recipe, and makes 2 hearty sandwiches.
1. Beat 1 egg with 2 tablespoons cream and 1 tablespoon of olive oil
2. mix in 50 gr almond flour, ( about 3/4 cup LOOSLEY packed)and 1/2 teaspoon each of salt, baking powder and italian spices (either already mixed or a mixture of oregano, garlic and parlsey totalling 1/2 teaspoon)
3. Pour half the batter into a mini loaf pan, or 2 large sized muffin cups.
4. Top with thin ham slices and enough shredded cheese to cover the meat
5. Pour on the rest of the batter
6. Sprinkle with a few sunflower seeds
Bake in the oven at 350 for 30 minutes
Remove from mini loaf pan, cut in half. Serves 2
If made in large muffin tins, the sandwich becomes a self contained unit that can be eated on the run hot or cooled off. Watch out for dribbly melted cheese if eaten hot.
Plum posted the carb count at 3 carbs for the half recipe used. The other nitritional counts will depend on the type of meat (ham, corned beef etc) and the type of cheese that you use.
