Default Dumb question - Milk "ice cream"?

Hello everyone,
Basically my question is pretty straightforward – does milk freeze well if you put it in the freezer? I’m on a south-beach type plan and I’ve been making flavored milk using carb countdown fat free milk and Davinci syrups, and it tastes good, I was just wondering if I could make an ice cream-like treat by freezing the flavored milk, or if it would just turn out gross? I know that if I used heavy cream it would probably work, but I don’t want to add all that fat (and calories). I was thinking maybe I could add xanthan gum to thicken it (?) Has anyone tried anything like this? I know it wouldn't be the same texture as ice cream, but I'm pretty easy to please. I have made yogurt pops before, but yogurt is much thicker than milk to start with. Any advice is appreciated.

I've heard of ice milk, so I'm sure it's do-able, but you probably need an ice cream maker or else it would be a solid block of ice.

I know yogurt works.

Try putting it into an ice cream machine. You could prob do something like...

Make a custard using carb count down milk & eggs (or egg substitutes), vanilla extract, and splenda. Then put it in the ice cream machine and let it rip.

Gelato (italian ice cream) is made using pretty much just milk with just alittle cream or half & half for some richness.

Sorry forgot to mention you do need to cook the custard first, LoL.

Heat the milk on the stove. In a seperate bowl whisk the eggs & splenda then add some of the hot milk to the eggs while whisking (its called tempering) then pour the mixture back into the rest of the hot milk. Cook until it coats the back of your spoon. Add vanilla. Pop in the fridge till its cold and then pour it in the ice cream machine.

I think it is doable, but its alotta work. I would suggest picking one up. They're usually on sale at walmart or target for maybe $25. Also check out the thrift stores for one (that's what I've been doing).

Yes you can do it without a freezer. Take it out of the freezer. Let thaw a little and whip it with your mixer. I do this with leftover homemade ice cream. It makes it creamy again.
