As much as I love eggs, I do try to vary our breakfast menu. After exhausting the possibilities of scrambled, scrambled with peppers and onions, scrambled with chourico, omelets, and mock danish, I realized that there are plenty of other things to eat for breakfast. I buy 1/4" thick steaks or thin slices of pork; these cook quickly and taste great, especially with a small broiled tomato (not good for induction, but ok after that).
Once in awhile my husband requests fish for breakfast, so I buy a piece of sole or tilapia. He loves it, but I can't go that far, even though I do like smoked salmon rolled around cream cheese or in an omelet for breakfast.
Oh, and I have made mushrooms stuffed with cream cheese and sausage; they are delicious and I think I found the recipe in the breakfast recipe section here.
And in DANDR, Atkins says you can eat any kind of protein for breakfast, so the possibilities are as endless as for any other meal.
