hi redsfan, welcome aboard
I don't like the white Iceberg lettuce either (that's the common head lettuce). I don't like the taste and it gives me gas, just like unpeeled cucumbers. It has a lot of water in it, but not a lot in the way of fiber or nutrients. You won't be missing much by not eating it.
I'm with debbie, and prefer romaine, endive and other dark green leafy types. Have you ever tried Boston Lettuce, also called Bibb??? It has a "softer" leaf, no hard bits, and very mild flavour. Spinach is delicious in a salad, with sliced raw mushrooms, sliced boiled eggs and crumbled bacon! Shredded cabbage is good too; the chinese Napa cabbage is lowest in carbs, and mildest in flavour ...
If you hate leafy greens in general, chilled leftover cooked vegetables are delicious with a vinaigrette or olive oil marinade -- broccoli, cauliflower, asparagus or green beans come to mind.
There's lots of variety out there waiting for you! Keep us posted on your success.
