I have read in alot of posts about a product called thicken not thin, where do I find this and who manufactures it? I assume it is a flour replacement?

It's not a flour replacement as much as a corn starch replacement. Becareful not to add to much though, that stuff really works :\

I want to try the sugar version and make sugar cookies now

This is a great product and can thicken sauces for like chinese stir frys and gravies for pot roast I even maked a subsitute cream sauce for tuna cassaole. It is pricey for a bag of this but it should last you a lifetime. My local store packaged up little one ounce trial bags and I still have alittle left from that...I am definetely springing for the whole bag this time also it is great source of fiber and adds no digestable carbs
