Default pasta from Atkins baking mix???

Hi all! Quick question...can you make noodles from the Atkins baking mix? I USED to make homemade pasta all the time and bought a carton of the baking mix today. Has anyone tried it? Heck noodles are just flour, eggs, H2O and a little oil and salt. Thanks much!! Betsy

Good question.

Have you SEARCHed this Kitchen Forum for any possible recipes or techniques using the word 'noodle'? It's possibly already posted here.

If not, and you DO decide to work out a noodle recipe using the Atkins Bake Mix, please do post it here, that would be VERY interesting.

Here's the ingredients in ABM:

Supro Brand Isolated Soy Protein, Soy Flour, Polydextrose (Litesse), Oat Fiber, Glucono Delta Lactone, Potassium Bicarbonate, Potassium Chloride, Sodium Phosphate.

My educated guess would be no because gluten is required - it's in wheat and other grains - to keep the pasta from falling apart and to give it the proper texture. It would be like making pasta from cornstarch - it just wouldn't work.

There are also leavening agents in it that would make the texture even more porous.

Here is a link to making pasta from Dana Carpender's Lowcarbzine. If you try it, let me know how it turns out.
