Question Egg Nog & Cheese Crips ?

Does anybody make their own egg nog? If so do you mind sharing the recipe or any tips?

(I know to try the recipe forum but the search doesn't work on 3 letter words.)

Also, how long and how do you store cheese crisps? (American cheese slices that are microwaved.) I usually make them and the kids and I eat them up off the plate but I'd like to make a bunch to take while we go away over Christmas.

I store cheese crisps in an airtight plastic container and (the time I forgot I had made some and didnt find them for a couple of months) they tasted the same!

Do you put them in the fridge? Or leave them out. I'm afraid that they would absorb moisture in the fridge but they are dairy and don't know about leaving the out?!?

I leave them out of the fridge as they have in effect been dehydrated by cooking all the moisture out of them.

I looked up my old recipe for pre-Atkins eggnog and it looks as if you could do it lowcarb quite easily by substituting cream/water for the milk and artificial sweetener for the sugar.

Ingredients
12 Eggs, separated
215g Sugar (substitute equivalent of sweetener - granulated splenda about 21.5 grams as my packet says it is a 1:10 ratio to sugar)
900ml Milk (substitute half cream/half water?)
240ml Bourbon
120ml Brandy
900ml double cream

Method
1. Beat the egg yolks and sugar together until the mixture forms ribbon trails in the bowl. Add the milk, bourbon and brandy. Mix well.

2. Just before serving whisk the egg whites into peaks, then do the same with the cream. Fold them into the egg yolk mix and pour it into a large jug. Add a grating of nutmeg over the top and serve.

Don't forget:
Raw or lightly cooked eggs should not be served to young children, elderly people, invalids and pregnant women, because of the risk of salmonella poisoning. I read that free range organic eggs are safer than battery eggs.


Of course if on Atkins you would have to have reached the alcohol rung/level of OWL!
