Neat ideas. I've always been a salad renegade, since I used to 'hate' mayo, and I'm still not a big fan of any salad dressing with vinegar. At restaurants, I'm not shy about ordering caesar dressing on a non-caesar salad. At home, it's no holds barred. I'll put three-cheese ranch and bacon bits on bagged cole slaw. Who says cole slaw has to have cole slaw dressing?
Cucumber 'noodles' - hey, that's a cool idea. I think I'd like an Asian-type dressing with that, maybe a la glass noodle salad. Maybe a few carrot matchsticks, thinly-sliced bell peppers, tamari/soy sauce, sesame oil, and a touch of sweetener. I tend to get a little "cucumbered-out" this time of year; that sounds like a good way to use them up.
Back to Werebear's post... it pays to be nice to your local restaurant/deli/butcher/shops that you frequent. If you feel comfortable talking about your diet requirements, they should be happy to help you. Years ago, "my" pub started selling Labatt Sterling (LC beer) by the keg because my ex and I drank a lot of it. At least I like to think that's why they had it on tap.
