Question Gingerbread???

Hello,

Does anyone have any ideas for making good old gingerbread (low-carb of course!)
I tried to make some using a regular recipe subsituting flour for a mixture of almond/oat/wheat gluten/protein powder that I found in previous threads and also subsituting the sugar with splenda and using Davinic's Gingerbread syrup ( used other ingredients of course -baking soda, spices, etc.)

Did it work out? No. It was extremely moist and did not rise. Not bread like at all.
Did it taste good? You betcha
Did I eat the entire "loaf"? Of course.

Any suggestions would be greatly appreciated from those of you who have had made low-carb baked goods.

I found a Low Carb Gingersnap recipe in the Low Carb Luxury Recipes page. I haven't tried making them yet but they are my favorite cookie. I will try them sooner or later.

There is a recipie for Orange spice cookies in Karens corner. It has lots of cinamon and ginger in it. It tastes sorta like ginger bread. Instead of making cookies I put the batter in an 8x8 oiled pan and baked them for 20 minutes. I frosted them with cream cheese. You may want to go look at it.
