Hi Everyone!
I'm Alecia from Birmingham, AL and I'm new to this discussion forum and the lo-carb lifestyle. Just thought I'd say hello and tell you guys a little about myself.
I found out in April of this year that I had Type II Diabetes after months of constant thirst, prolonged infections and being completely lethargic. I have a family history AND I'm overweight!
Anyway, I have a friend who's been lo-carbing via the Atkins' Diet on and off for a couple of years and she recommended it to me. I read the book and was completely inspired. I started the diet in June but have recently become COMPLETELY committed to it.
I feel like a total witness for the diet and have since encouraged my slightly-chubby, Type I Diabetic sister to join the lo-carb club too!
I've lost about 20 pounds total since I became a Diabetic and most of that can be attributed to this diet.
So here's my two cents when it comes to some (other than the usual stuff) good lo-carb food:
Pop-Ice Lite : Remember those popsicles in plastic sleeves that you freeze that we ate all summer as kids? Well they make the sugar-free version now with 0g sugar and 1g carbohydrate for 2 pops (*they do contain sorbitol, glycerin and aspartame, but this doesn't seem to affect my weight loss)! They're great! (I found them at Walgreens)
Also lettuce wraps! Ever had them at Houlihan's or P.F. Chang's? They're awesome! Take some grilled pre-cooked chicken and cut it up in very small chunks (very small!) and "stir fry" in oil with peanuts, sesame seeds or sunflower seeds (whichever you prefer), onions, bell pepper, (get creative!), add some crushed red pepper, soy sauce and/or your fave szechuan flavoring and use iceberg lettuce leaves as taco-like wraps. You'll fall in love, I promise!
And one more... my co-lo-carbing friend recommended these. Lo-Carb tortillas at
www.latortillafactory.com. I can't do it without them!
Ok, enough here... good luck lo-carbing. I'm counting on you guys to be my support when I'm DYING for M&M's or Moose Tracks ice cream! -laugh-
