Question Low Carb Hanukkah?

Is this possible or am I just kidding myself? I don't even know how I would go about making low carb latkes. I've made combo veggie ones in previous years, but never totally omitting potatoes. And the matzo meal in itself is high carb although you don't need much.

Any ideas out there?

I have never eaven heard of using Matzo meal in latkes. I try and keep the mazo meal to one time of year and keep that to a minimum.

I have made latkes using shredded zucchini a little bit of carrot onion and other veggies parsley oil spices and eggs. Its sort of like a mini fritata.

I suggest using daikon. I will probably experiment with it a few times this week. If I come up with anything good I will let you know.

and you can always eat them with sour cream.

I also recall seeing a doughnut recipe in the recipe area a while ago. I dont remember it but I think it was deep fried and it sounded similar to the jelly doughnuts I used to make.

I used to get the pilsbury biscuits in the red package and deep fry them and inject them with jelly after.

I am sure if you really wanted you could do something similar with LC doughnuts and sugar free jelly.

I dont think latkes and Jelly doughnuts are worth going off plan for.

If you don't mind mashed potatoe kind, cauliflower mixed with egg works great.

You can also shred turnips, and zucchini.

Do online searches for LC recipes. Also use the search function on the bored here and look through the recipe forums.
