Stuffed Tilapia
Serving Size ( 3-4 servings)
8 tilapia fillets
2 cups of freshly grated parmasan cheese
1/4 cup of scallions
1 1/2 stick of land o' lakes unsalted sweet cream butter
2 cups of shrimp
1/2 cup of cooking white wine
1/2 teaspoon of fresh minced garlic
2 teaspoons of dill
1 teaspoon of black bepper
1/4 cup of freshly squeezed lemon juice

Preheat oven to 350. Season fillets front and back with black pepper and dill.
In small sauce pan melt 1 stick of butter, add garlic, lemon juice and white white. Sautee seasoned shrimp for about 3-4 minutes in scallions and 1/2 stick of butter. I used the frozen shrimp that are already cooked, they are going to continue to bake in the oven with the fish.
Spray baking dish with PAM. Take a seasoned fillet, sprinkle with parmasan cheese, add 3-4 shrimp and then begin to tightly roll fillet. You may add as much cheese and shrimp as you would like. *The more stuffing you add, the harder it will be to roll. Stick a toothpick in each end of the rolled tilapia.
Continue this process untill all fillets are filled and lined snuggly against each other in the baking dish. Pour garlic, butter, white wine and lemon sauce over fish, sprinkle with remaining cheese and bake about 30 minutes or until fish is no longer transparent.
