Honeyville Grains Wheat Protein Isolate -- Which to buy?
I'm experimenting with making my own low-carb bread mixes... I want to order the wheat protein isolate from Honeyville Grain, but I'm not sure which to get... the Arise 5000 or the Arise 8000? Which works better when blending for a bread flour replacement? The 8000 has less carbs and is supposed to be "doughier", so that's what I think I'll get.
Does anyone have any experience using both?
