Default Soup Bones

Hello

I was just reading some posts about making soup and I saw a couple of people wondering how to obtain bones. I freeze my bones after using a chicken or turkey- if I'm not going to make soup right away. I like to cook in large batches so I wait until I have the bones of a few chickens before throwing them in a pot with an onion and some celery and boiling them for 10 or 12 hours. Adding a tbsp of vinegar to the water apparantely helps extract more calcium and protein from the bones and into the broth. You can leave the skin too it makes it easier the skim the fat when chilled if the fat layer is thick and firm.

I just keep a large bag in my freezer that is full of bones and add to it till I have enough. Then after I have made a large batch of broth I bag it up in ziploc's or use empty yogurt containers to freeze it in.

When I make soup if I want chicken in it I add some fresh to the soup because I find that if I boil a chicken long enough to get a good broth the chicken is dry and tasteless.
