Mmmmm...I'm glad I got to answer this first, because I know so many people are going to say the same thing...

Make it your "mock" potato! I boil it until soft, chop or crush it right in the pot...I add tons of butter, sour cream, chives, bacon bits and cheddar cheese...mix that all together and pour into a baking pan...put in the oven until it all heats through (half hour or so) and top with a little more cheese...

Oh my...had this for Thanksgiving and even the non LC-ers finished it off before the mashed potatoes!

That's my favorite, anyhow...

I love it just microwaved. Cut the head up into little 'flowerets' that are about a large bite size. Put in a covered casserole with about 2 ounces of water and microwave for about 6 minutes. (That's how I like them, but experiment with shorter times if you like them firmer, and longer if you like it mushier.) Have some grated cheddar ready and sprinkle on top so it will melt. You can also just melt butter over it.

Now for the fancy stuff, how about "Faux Tatoes" - a delicious sub for potatoes.
Cook cauliflower pieces (frozen are fine) until very soft. Mash up while still hot and add half a brick of cream cheese and about a teaspoon of dried onion flakes. Fabulous taste and all the fun of mashed taters.

Look in the Recipe section of this board for more ideas. You could eat for years without repeating any.

Roast it with garlic, salt, and olive oil! 400 degrees for 20 minutes or so until it turns brown. Really brings out the flavor!
