left over pork roast
Okay, made a large pork roast on the showtime rotiserrie and it was very good, but the family wasn't into roast that night. so,now I have a lot of pork roast left over. I want to take the outer edge off (I basted it with bbq sauce) so I can make a low carb dinner (starting back to strict low carbing earlier than I planned- sunday or monday). I plan to freeze the roast, then possibly doing something with it later. Any suggestions? I was thinking of cutting it up into cubes and adding some garlic, green chiles and green sauce to do some chile verde, but I would really like some other suggestions.
