Default left over pork roast

Okay, made a large pork roast on the showtime rotiserrie and it was very good, but the family wasn't into roast that night. so,now I have a lot of pork roast left over. I want to take the outer edge off (I basted it with bbq sauce) so I can make a low carb dinner (starting back to strict low carbing earlier than I planned- sunday or monday). I plan to freeze the roast, then possibly doing something with it later. Any suggestions? I was thinking of cutting it up into cubes and adding some garlic, green chiles and green sauce to do some chile verde, but I would really like some other suggestions. Thanks in advance to all you FABULOUS cooks out there! -Denise

You could shred it and make a sauce with mustard and pickle juice and splenda and have pulled pork with a nice sauce.

You could cube it and make a pot of chili.

You could dice it and make a stir fry.

You could dice it, serve with salsa, guacamole, sour cream and cheese and roll into large lettuce leaves as "tacos" or burritos.

You could cube it, make a Thai or Indian curry.

You could shred it and serve it on mixed salad greens with your favorite dressing and accoutrements.
