Default tired of string beans.....

Still in induction; have had string beans almost every day, because husband really only likes them, plus corn, peas, potatoes. Won't touch broccoli, cauliflour, etc. Made great roasted red pepper and gazpacho soups. Have BBQd red/green peppers, zuccini, onions--but that is the extent . I need some ideas for vegetables. Thanks

My DH is the same way. I just fix 2 vegetable - one for him and one for me. It's a bit of a nuisance but I've gotten used to it. I often have to fix 2 completely different meals. Last night I made him sausage and waffles (his favorite) so I had sausage and eggs.

One serving of a vegie is easy in the microwave. Just lay them on a plate, drizzle with olive oil or melted butter and seasonings and cook on high 2 or 3 min. I have a steamer inset for a saucepan and just put in a serving of broccoli or cauliflower and steam them. I like those better steamed. Asparagus works good in the micro.

Hi there!

What about some homemade coleslaw? Buy some preshredded cabbage and add some mayo, vinegar, celery seed, and splenda.

If he will eat peppers how about a stuffed pepper? You could take a green pepper and stuff it with beef or any type of meat and seasonings. You mentioned you made zucchini - a great zucchini dish is cuttin the zucchini into strips, spread with some butter and sprinkle on plenty of parmesan cheese and then under the broiler.

My husband got turned on to the atkins diet just from this one dish - a poblano pepper, roasted, peel the skin, scramble some eggs with bacon, stuff it in the pepper and make a cheese sauce from cheese and cream and pour that over the pepper stuffed with cheese.

Hope that's any ideas!
