Please tell me there are low carb crackers out there to go with my chicken and tuna salad !!

Or if you have an EASY recipie idea please share...Thanks!!!

I am in maint. and haven't had any problem adding back whole grains so.... every two or three weeks I will eat a cracker with cheese. I use the Wasa fiber rye.

Nutrition facts:
1 slice (BIG sheet cracker about the size of a graham cracker sheet)
calories : 30
sat fat: 0
cholesterol : 0
sodium: 50
Total carbohydrate 7g
Dietary Fiber : 2
Sugars: 0
Protein: 1

100% natural ingredients: Whole grain rye flour, wheat bran, sesame seeds, wheat germ, wheat fiber, sea salt.

I tried the bran-a-crisp that atkins recommended in his book and hated it. This has really been the only atkins friendly (for owl or maint) alternative worth eating that I have found.

check out the recipe section (quick meals and snacks) there are lots of suggestions on there. Personally when I want something to put my tuna on I make cheese chips. I take cheese and cut it in slices and put on wax paper in the oven for about 15 minutes at 350F (180c) let set for about 2 minutes then it crisps up nicely like a chip (or cracker) and i put my tuna on it. This can be done in a microwave but I don't have one currently.

Maybe I could just do something to my Low-Carb Tortillas that turn them into crackers?

Crispy cheese, that is a great idea. Also I have made pizza crust out of my tortillas, so I know they toast well. I assume that would work too Les! But I am not a big fan of the Wasa crackers...to grainy for me.

Ahh you live in a nice place that HAS low carb tortillas. You are SOOOO lucky. I live in the middle of nowhere so EVERYTHING is homemade.

Karen says this about using tortillas....

"I've cut them, then brushed them with oil and baked them. Some tortillas can also be peeled in half. You might have noticed this as you were cutting them. They're thinner, therefore crispier."

You could try that, or you could use pork rinds as your cracker.

I got this recipe from somewhere -- maybe on this forum. I've modified it a tiny bit for my own tastes. They're good.

LOW CARB CRACKERS

(SUNFLOWER-PARMESAN)

1 cup raw, shelled sunflower seeds (unsalted)

793 cal, 70 g fat (7 g sat fat), 28 g carbs

(9.3 g fiber, 4.7 g sugars), 32.7 g protein

½ cup Parmesan cheese

228 cal, 15 g fat (9.5 g sat), 1.9 g carbs (0

g fiber), 20.8 g protein

1/4 cup water

1. Preheat oven to 325EF.

2. Put the sunflower seeds and Parmesan in a food processor with the "S" blade in place, and process until the seeds are a fine meal with almost a flour consistency.

3. Add the water, and pulse the processor until the dough is well-blended, soft, and sticky.

4. Cover a cookie sheet (standard half-sheet size) with a piece of parchment paper cut to fit. Cut a second sheet of parchment the same size.

5. Place the dough onto the parchment. Place the second sheet over the dough. Using your hands (or a rolling pin) press the dough to as thin and even a sheet as you can, going out to the edges of the parchment paper. The thinner the dough, the better, as long as there are no holes in the dough.

6. Peel off the top layer of parchment. Use a pizza cutter or knife to score the dough into squares. You can vary the size as you like, but 1.5 inch crackers seem to work the best.

7. OPTIONAL: Lightly salt the tops of the crackers. Gently press the salt into the dough. Use a toothpick to poke "holes" into the dough for decoration.

8. Bake for 20-30 minutes or until evenly browned. WATCH CAREFULLY your first batch.

9. Remove sheet of crackers from pan, let cool, and break into squares along scored lines. Store in a container with a tight lid.



Carbs per cracker (based on 48 crackers per batch) – 0.4 g

I fried a whole wheat lc tortia a few times till crisp, then put tuna salad on it. Yummy change of pace when craving a cracker.

I found some great crackers. They are Brenton brand and they are minis. You can have 19 minis for like 7 carbs.
